The old-school convection ovens are starting to fade out. People are moving toward shortwave infrared (IR) lamps instead.&#xA;We build these lamps to be the heavy lifters in conveyor lines. The goal is simple: strip the moisture off the surface fast, but don&amp;rsquo;t cook the inside of the treat into a brick.&lt;/p&gt;&#xA;&lt;h2 id=&#34;the-power-stuff&#34;&gt;The Power Stuff&lt;/h2&gt;&#xA;&lt;p&gt;We usually go with high-wattage quartz tubes for these setups. Whether you&amp;rsquo;re running 230V or 400V, it&amp;rsquo;s all about that heat flux.&#xA;Here&amp;rsquo;s the thing: shortwave IR doesn&amp;rsquo;t wait around for hot air to blow across the product. It dives right in and vibrates the water molecules. It&amp;rsquo;s fast. Really fast.&#xA;But there&amp;rsquo;s a catch. With that kind of heat, your belt speed has to be spot on. If your product lingers too long under a 2000W tube, you&amp;rsquo;ll end up with a scorched exterior while the middle is still damp. It&amp;rsquo;s a balancing act.&lt;/p&gt;</description>
